I hope you enjoyed last weeks, Italianesque Stuffed Acorn Squash! It felt like a real Fall dish! Anyhow, I am really enjoying my Paleo Comfort Foods cook book, but this week I decided to reminisce on my childhood, when my Father use to cook the most amazing stir-fry dishes! It may not be exactly like his, but this dish came pretty close- deliciously passable 😉

What you need:
- chicken breast and thigh meat (or just thigh)
- green beans
- mushrooms, I used Brown Clamshells, they are so cute!
- Chinese broccoli
- Organic Virgin Coconut Oil
- black bean sauce
- maple syrup
Put it together:
Saute garlic with coconut oil in a wok or large skillet, add chicken and cook till “almost” done. Set aside.
Same pan, add more coconut oil and garlic and put green beans and broccoli to cook.
While veggies are cooking, in a little mixing bowl put 1 teaspoon of black bean sauce, 1/2 cup water and stir, then add 2 teaspoons of maple syrup, stir.
Add the mushrooms and the chicken in the wok, pour sauce over– stir & fry for a few minutes and serve!
The macronutrient ratios for the Metabolic Typing Types:
Protein Type: 70% proteins & fats (40/30) / 30% carbohydrates
Carbohydrate Type: 60% carbohydrates / 40% proteins & fats (25/15)
Mix-Type: 50% carbohydrates / 50% proteins & fats (30/20)
*In General: Protein Types should avoid Gluten, Protein & Mix-Types should have high fiber, low-to-medium starch carbs, and sprouted grains.
*There is no calorie counting in the Metabolic Typing Diet. Reason being, if you eat for your body type, your body will know when to stop. No over-eating. No cravings. No depriving.
